Salads that are More than Just Healthy Side Dishes


Salads make for delicious and healthy sides for a main course. There are many people who cringe at the name of a salad. While there are others, who loves to eat green leafy vegetables. If you have kids who fuss on eating vegetables, check out these delicious recipes that they will finish in no time.
• Superfood Leafy Salad: Start with chopping romaine lettuce leaves. To make the dressing blitz Greek yogurt, pepper, capers, lemon juice, zest, salt, olive oil, nutritional yeast, maca powder, and Dijon mustard. Add some crunchy pumpkin seeds, watermelon seeds and hemp seeds. Drizzle the dressing before serving.
• Thai Som Tam Salad: Thinly slice some raw papaya, cilantro, mint leaves, and spring onions. To make the peanut dressing, mix smooth peanut butter, lime juice, maple syrup, rice vinegar, soy sauce, sesame oil, sriracha, minced ginger, garlic, and water. Arrange the papaya in a bowl and top with some ripe mango slices and crushed peanuts. Drizzle over the dressing and mix well. Serve this crunchy salad cold with a wedge of lime.
• Jamaican Spicy Bean Salad: Cook some organic basmati rice and set aside. Sauté some onions, garlic, and bay leaf. Stir in some tomatoes, corn kernels, capsicum, and canned beans. Add coriander, cumin, paprika, and cayenne pepper. Add the rice and mix well with the other ingredients. Add a lettuce cup in a bowl, top it with the cooked rice. Garnish with avocado slices, cilantro, and lime juice. Enjoy this hearty rice salad warm or cold. Use the best basmati rice for this salad.
• Tropical Hawaiian Salad: This refreshing summer classic salad is wonderfully hydrating and delicious. Slice some watermelon, pineapples and place in a bowl. Add a handful of rocket leaves and crumble some fresh feta. To make the lemon drizzle, add lemon juice, apple cider vinegar, mint leaves, pepper, in a jar and give it a shake. Drizzle over the dressing and serve the salad cold.
• Seasonal Island Salad: This salad can be served with crusty bread and mezze dishes. Chop some English cucumbers, kalamata olives, red onions, cherry tomatoes, and feta cheese. To make the dressing, mix lemon juice, olive oil, oregano, fresh basil, salt, and apple cider vinegar. Drizzle the dressing and serve cold with grilled veggie skewers.
• Lebanese Salad: In a bowl, toss some chopped, tomato, zucchini, cucumber, lettuce, radish, cooked chickpeas, red onions, and pita bread croutons. To make a refreshing mint dressing, blitz lemon juice, mint leaves, olive oil, salt, and pepper. Drizzle over the dressing and serve cold with a side of pita bread.
