Culinary Classics: Preparing the Good Old Kabuli Pulao

Kabuli Pulao is one of the most popular and widely eaten dishes across North India. If you belong to a traditional Muslim household in Uttar Pradesh, then you must have eaten this dish at least once in your life. It is one of the tastiest and the richest pilafs found in the south-Asian cuisine. If you are fond of eating a rich and flavourful pilaf loaded with veggies and beef/chicken, then you need to try the good old Kabuli Pulao. 


Here’s how you can prepare them:

Ingredients:
  • 1 Cup basmati rice (make sure you use the best basmati rice available in the market)
  • Cooking oil
  • Curd (a small cup)
  • Chopped onion
  • Kabuli chana (1 cup)
  • Green chilli
  • Ginger garlic paste (1 tablespoon)
  • Cardamom
  • Salt (as per taste)
  • A couple of chopped green chillies
  • A few cloves
  • Kadi patta
  • Turmeric
  • Coriander
  • Red chilli powder
Procedure:
  • First of all, you need to soak the rice in water for one hour.
  • After the soaking part is done, boil the rice in water and add salt to it as per your taste.
  • Keep it aside

For the Chana:
      
  • Take a pan and heat some oil in it.
  • Once it is done. Add green chillies, kadi patta, cardamom, ginger paste and a few cloves to it. Once you have added all of it, sauté it thoroughly.
  • Now, you need to add chopped onions and coriander to it and sauté them well
  • Now, add your Kabuli chana into the pan and cook it well. Add a little salt and red chilli powder to spice it up a bit.
  • Once the chanas are well cooked, add curd to the mixture and let it cook for a while. Once cooked, remove the lid.
  • As the last step, mix rice and chana and serve it with your favourite veg/non-veg curry.

 Kabuli Pulao is best enjoyed with onion raita and makes for the perfect dish of birthday parties and family get-togethers.
