Ginger Jalapeno Sauerkraut

Start with sterilizing the canning jars in hot boiling water. Thinly slice a medium cabbage into thin strips. Thinly grate beet in a food processor. Add the cabbage in a big mixing bowl. Add 2 tablespoon of sea salt and let it sit for 15 minutes. Use a wooden spoon or a sauerkraut pounder to smash the cabbage and mix it with the salt. Chop 1 jalapeno, 1 ginger, and add it to the kraut. Add the mix in a sterilized jar. Pour the brine and use a fermentation weight. Close the lid and put it on the kitchen counter for 3 days. After that period, you can transfer the sauerkraut to a cooler place like a refrigerator or root cellar for slowing the fermentation process. Use freshly-ground rye flour for this recipe. Add 100 grams rye flour and 100 grams filtered water in a jar and mix well. Cover with a cheesecloth and lightly attach the lid. Discard half of the starter after 24 hours and add equal parts of flour and water. Repeat this process for 7 consecutive days. You might notice bubbling and froth inside the jar after a few days of feeding. The wild yeast might increase and decrease depending on your kitchen temperature. You can bake bread using the starter and store the rest in the fridge. While the starter is being refrigerated, you can feed it once a week.

Cut in cubes an assortment of gala, fuji, granny smith, and honey crisp apples. In a big glass jar, add the apple slices along with water. Fill the jar till the rim. Cover with a cheesecloth or lightly place the lid. Let the vinegar ferment for 30days on the kitchen in a cool and dark area. Give it a stir every 1-2 days to prevent any moulds. Strain the vinegar after 30days and store in the pantry for another 3-4 weeks for continued fermentation. After this period, store the vinegar in the refrigerator.
