Delicious Winter Appetizers to Serve on a Sunday Brunch
Winters in India see a bounty of colorful fruits and
vegetables. From beta-carotene rich carrots, bell peppers to beetroot. The

• Squash &
Rocket Bruschetta:
Cut some thick slices of a baguette and grill with a
bit of olive oil. Roast some butternut squash with a touch of olive oil, salt,
and thyme leaves. Top it with homemade hummus, roasted butternut squash and add
crumbled brie cheese. Toast the bruschettas for 2 minutes until the cheese
melts. Add some rocket leaves and sprinkle some red chili flakes.
• Roasted
Rosemary Potatoes:
In a baking tray, add halved baby potatoes. Drizzle
with olive oil, salt, pepper, and chopped fresh rosemary. Mix well with your
hands. Add a few knobs of butter and bake at 350 degrees for 35-40 minutes.
This is a great side dish to serve with Indian dishes like vegetable pulao. Basmati rice is good for cooking festive dishes like pilaf, and
biryani.
• Zucchini
& Goat Cheese Fritters:
Mix some grated zucchini, salt, pepper, ground garlic,
thyme, basil, flour, thyme leaves, goat cheese. Drain the grated zucchini in
cheesecloth to drain excess water. Scoop the batter and shallow fry in olive
oil until golden brown. Serve with a side of mint yogurt.
• Honey
Roasted Baby Carrots:
Remove the ends and blanch some colorful baby carrots
in boiling water. To make the glaze, add honey, rosemary, salt, pepper, sumac
in a jar and shake well. Sauté some garlic in olive oil and add the tender
carrots. Pour over the mix, and sauté for 10 minutes. Finish the carrots in the
oven for 10 minutes. This dish is best served with the best basmati rice
dish like pulao.
• Gnocchi with
Crispy Sage:
You can use store-bought gnocchi for this recipe. In a
processor add a few slices of roasted butternut squash, garlic, salt, pepper,
olive oil. In a pan, sauté the gnocchi with a knob of butter. Add fresh sage
leaves. Serve the pasta in a bowl with crispy sage leaves. Serve this delicious
Italian dish with a side of crusty ciabatta.
• Cauliflower
Taco:
Roast some cauliflower florets in olive oil, salt,
pepper, and chili flakes. Toast some whole wheat taco shells. To assemble, add
a layer of shredded purple cabbage, roasted cauliflower, coriander leaves.
Season with pepper and chili flakes. Serve with a few wedges of lime and a side
of queso dip.
