Easy & Delicious Summertime Appetizers that Kids will Love
Children love to snack quite often on unhealthy junk. If you plan some snacks and appetizers with seasonal summer produce, you can be snack-ready at any time. Summer sees a great bounty of seasonal produce like watermelon, mangoes, cucumber, squash, herbs, etc. If you are looking for some healthy appetizer ideas, check out these recipes:
Mezze Platter: It is always a great idea to serve a Lebanese mezze platter at
children’s gathering. Make some homemade hummus, baba ghanoush, and labneh dip.
You can either bake some fresh pita bread or get some of your local bakeries.
To serve some pickles on the side, ferment some beetroot and carrot in apple
cider vinegar. To assemble put the hummus, dips in medium-sized bowls, add the
pita bread, and pickled beetroot.
Bibimbap: Roast your favourite vegetables like zucchini, bell peppers,
eggplant with a touch of olive oil. To make the sauce, mix honey, tahini paste,
salt, soy sauce, lemon juice, chili flakes, and pepper. To assemble the bowl,
add cooked brown basmati rice, a handful of veggies, crispy baked tofu,
edamame beans and drizzle the sauce.

Rice Cakes: Children love the munch and crunch, that is why rice cakes are
the perfect snack. Place three rice cakes on a serving dish. On the first one,
spread some hummus and top with sundried tomatoes, and fresh basil leaves. On
the second one, spread fresh guacamole and top with some chili flakes. On the
third one, spread some cream cheese and top with caramelized mushrooms and
fresh dill.
Zucchini & Cheese Rosti: Mix some grated zucchini, salt, pepper, ground garlic, thyme,
basil, flour, parmesan cheese. Scoop the batter and shallow fry in olive oil
until golden brown. Serve hot with a side of Greek yogurt & mint dip.
Dips & Chips: To make the classic guacamole dip, mix avocado, coriander, salt,
pepper, lemon juice, onion, tomato. Blitz in a blender for 5-10 seconds for a
smoother consistency. To make hummus dip, mix hummus with basil pesto and top
with pomegranates and mint. Bake some sweet potato, beetroot chips with a touch
of olive oil, and paprika. Season with salt and pepper while it is hot. Serve
these delicious dips with a side of chips to dunk into it.
